We are very particular about the coffees we offer and never buy old crop coffee, even though this means that your "favorite" coffee will not always be available. Our model is to follow the coffee harvest around the world to ensure that you get the best of the best at any given time of year.
Coffee is an agricultural product which, under proper conditions; i.e., temperature, humidity and air circulation, can be stored for a relatively long time. However, like all agricultural products, there is a distinct difference in taste between new crop and old crop. This difference is very noticeable if the coffee is roasted to highlight its character – the nuances that a particular region has to offer. If coffee is roasted dark, these nuances are less distinct and one will notice a smoky or charcoal taste.
For this reason, we look for coffees in other regions that offer some of the same characteristics that are present in our "favorite" coffees. For example, a Nicaraguan coffee harvested during the January – March cycle may have some of the same characteristics as a Peruvian coffee harvested during the August – October cycle.
