Artisan Handcrafted Qualtiy

One of the wonders of exceptional coffee is how nature is constantly changing it around.  For this reason, technology alone cannot replace human experience in roasting a coffee to perfection.  Roasting coffee properly requires a few basic elements:   Exceptional green (raw) coffee, a world-class small batch drum roaster, and finally, an uncompromising artisan roastmaster with all the skills necessary to coax the best out of the coffee.  Anyone can turn a bean brown.  That isn't roasting.  That's browning.  Throw coffee in a roaster, apply heat, and watch the color transformations occur.  It looks something like this.

Creating award winning coffee takes a much more than that!  Knowing when to apply heat to speed up the roast, or when to slow it down, and at what rate, is paramount.  What's more, each roast is different.  The real mark of any craftsman is knowing how his tools operate and how to best employ the features they have to offer. 

At Caffe Lusso, neither Wayne or Philip use computer technology to achieve their signature flavor.  Although popular today, computerized roasting methods simply cannot compete with the touch of a Master Roaster.  Our view is more toward an artisan approach of doing things the old fashioned way:  Sight, Smell, Sound, Touch and Taste.  All of the senses are employed by a craft roaster to "tune in" to what the coffee is doing inside the roasting chamber. 

As the crops change season to season, the craft roaster must also change, or modify, the roasting process to extract subtle nuances from within the bean to a stage where the result is unbeatable coffee.

Our bullet proof method for guaranteeing perfect coffee is that we cup every batch we roast.  If the batch isn't up to the highest  standards,  we don't put it in bags for sale.  It's that simple!
